χουνκιάρ μπεγεντί

Hünkâr beğendi ('Sultan's Delight'), made with beef (usually) or lamb stewed with tomatoes, onions, red wine and cinnamon, served on a bed of puréed smoked aubergines mixed into a béchamel sauce with grated cheese and nutmeg. According to legend it was invented by the chefs of the very fussy 17th-century Sultan Murad IV, not long after the recipe for béchamel was invented for Louis XIII of France.

Today this is probably the most complex and famous of all Politiki Kouzina dishes, one that's often served in restaurants in northern Greece.
