Deep fried tomato fritters. Α specialty of Santorini, thanks to its small, flavour-packed, low water sweet tomatoes that grow in the volcanic soil.

Recipes vary wildly: some add fava as well as flour to bind them, while others add cheese, mint, capers etc.
