pastry filled with walnuts, honey and spices

Made in the former Jewish towns of Pitigliano and Sorano, this is a soft pastry (pasta frolla) shaped like a cigar and filled with chopped walnuts, honey, orange peel, aniseed and nutmeg.

Like bollo, it's been listed in the Slow Food Presidium as part of la cucina dei goym nelle città del tufo.
