Gröstl (or groestl) is a German Sud-Tirol dish, originally based on roast potatoes (rostkartoffeln, hence the name). It can be a rather refined dish here, usually cooked in a pan with speck, sausage, lamb or other meats thrown in, and sometimes wild mushrooms. Sometimes called a rosticciata.
