dish with parmesan cheese

Any dish using parmesan might be called parmigiana di or alla parmigiana, but usually this refers to something fried (often breaded first) and then baked with tomato, parmesan and another cheese. The southern classic parmigiana di melanzane (aubergines, eggplants) was probably the first, but the idea has spread to other things, in Italy and especially among Italian-Americans:

parmigiana di zucchini or zucchini alla parmigiana: courgettes

parmigiana di trippa: tripes

parmigiana di pollo: chicken breast

parmigiana di vitello: veal

parmigiana di lumaconi: snails

parmigiana di carciofi: artichokes
