flat bread of Umbria

A flat bread, baked according to a recipe that goes back to Etruscan times on a 'testo', a heavy disc (the video shows how). Other names throughout Umbria include crescia, ciaccia, and even pizza sotto il fuoco.

It's similar to, but usually somewhat thicker than, Romagna's piadina.
