Or usually pearà alla veronese. Mix breadcrumbs with marrow (midollo di bue), add beef broth, Parmesan, lots of black pepper (pearà means peppery) butter and salt, and add a bit of horseradish on the side, and there you go. Serve it with a bollito misto.
