Lampuga caught near Levanto, Liguria

A favourite of sport fishing for its fighting spirit and beauty and a much prized delicacy in the kitchen, dolphinfish or Coryphaena hippurus is not related in any way to dolphins, in spite of its name. It's well known in the Caribbean and Pacific; Americans often call it by the Hawaiian name, mahi-mahi. The biggest ones stretch over two metres long and can weigh up to 20kg.

But lampuga (also known as corifena cavallina) also inhabits the Mediterranean, especially between Sicily and Malta and off the coast of Liguria. In Malta, where it's called lampuka, they often eat it during Lent.
