This ridged shell oval pasta shape with a flowing edge has one of the more convoluted, but poetic naming histories. Orginally named Paguri after a little (inedible) crab found along the coast of Italy, it was later christened Castellane, 'the castle dwellers', recalling the massive skirts that women in the Italian court used to wear, gathering up the fabric to drape over their left arms as they walked. It's good with meaty sauces or in casseroles.
