Originally from the Molise. Comes in various shapes and sizes, round or half-moon shaped, with cheese (often goat cheese) inside, along with maybe sausage and tomato. Some, especially in the Abruzzo, also make fiatoni dolci: sweet versions, usually with ricotta. There are recipes here.
In Corsica, a fiadone is a lemon-scented cheesecake.
