biga

starter/sourdough

Biga is a yeast starter, made with yeast (lievito), water and flour and kept overnight for the making of breads with a light crumb such as ciabatta or mafalda. It's also used for sourdough bread in Friuli; biga servolana are sourdough rolls.

In Sicily it's often called cresciuta.
