tortoni

a lighter kind of ice cream

According to legend, this frozen dessert was invented in early 19th-century Paris by a Neapolitan café owner named Giuseppe Tortoni. Air is whipped into egg white and cream, folded together and flavoured with a liqueur and frozen. Often it's served on a biscuity base of crumbled amaretti, and topped with almonds and maraschino cherries. Sometimes known as biscuit tortoni.
