Ainuzzi

cow's cheese in the shape of animals

One of Italy's more unusual cheeses, this stretched-curd cheese is hand-modelled in the shape of animals (horses, rabbits, ducks, deer, and goats are the most common). One of the last few places to make it is the Fattoria Giambrone in Cammarata in the province of Agrigento.

Also called Caci figurati and designated PAT.
