castrato

young mutton

Carne di castrato (or castratu or castrá) posted over a butcher's stand has given many opera lovers pause, but don't worry, it's mutton, castrated early, and butchered at 5-12 months old.

The Italians say it makes the meat much better. Castrato is especially popular in Trentino-Alto Adige and Emilia-Romagna.
