sorbet

Introduced by the Arabs to Sicily, and initially made with the snows of Mt Etna, sorbetto is made from fruit (usually citrus) and water (and sometimes alcohol) rather than any dairy products—as in an American sherbet. Italians like to serve them in the rind.
