Recioto

A luscious passito or straw wine, white Recioto di Soave is made from Garganega grapes (the name is said to come from the recie, 'ears' the name for the two little extra clusters of sweet grapes that Garganega typically forms on top of each bunch); it's a traditional tipple to wash down a panettone.

Red Recioto della Valpolicella is made from the region's Corvina and Corvinone grapes that often have been afflicted with noble rot (unlike those used for the wine's famous sibling, Amarone); the result is famously one of the few Italian dessert wines that goes well with chocolate.
