All the stuff that goes into sausages, or that sausages go into. Budellini (sometimes budelline) are generally the intestines in poultry, though they can be fish guts too; budelline di stocco, or trippette di stocco, are the swim bladders of stockfish (wind-dried cod), once popular in Liguria and the south stewed with tomatoes.

budella alla sestese: pork intestines (chitterlings) boiled in a broth with herbs, served with rice cooked in the same broth; speciality of Sesto Fiorentino.
