Not often seen on menus, although travel writer Reid Bramblett tells the story of ordering it in a traditional trattoria outside of Florence, delighted to find that it meant mutton stew served in steam-cleaned sheep's skull, although with some rather unexpected parts of the sheep included in the mix.
