Crunchy outside, soft inside, gofri, the traditional waffles of Piedmont, were made in irons over the fire in mountain valleys, where it was often hard to get bread in the snowy winters. Like crêpes, they can be eaten with savoury ingredients such as cheese and ham, or chocolate or marmalade.
