crespone

old-fashioned salami

Just another word for salame, but usually meaning an irregularly-shaped country salame following some family recipe. Piedmont crespone is DOP; In Lombardy it is also known as salame di Milano. In Calabria sometimes a 'nduja or a soppressata is called a crespone.
