A speciality of Carloforte, often spelled cuscus.

How did it get there? Carloforte was founded in the 18th century by families of coral fishers, who had left Tunisia in 1541, and settled in Genoa. When it began to run out, they moved to the west coast of Sardinia, where the coral was abundant. Making couscous has been passed down in their families ever since, and is celebrated in a Sagra di Cuscus in late April.
