Canoce (or canocchia) may look like science-fiction bugs, but they're big (up to 8 in.), tasty and plentiful, and lately Italian cooks have been finding places for them everywhere a crustacean can be employed.
Some people call them cicala di mare (sea locust). There's a resemblance, but the real cicala is a separate, protected species.In Friuli they like to come them in a soup, zuppa di canoce.
