sfilacci

'threads' or 'scraps' of meat

Very thin, usually machine-cut and sold packaged. Sfilacci or the wider straccetti can be any animal, fried, cured or smoked, used for dressing up a salad, pizza or pasta dish. Also as an antipasto, usually with beef or veal with rocket and parmigiano, or with artichokes.

It's one good use for horse meat; salads with sfilacci di cavallo have become quite trendy.
