paccheri

enormous pasta tubes

Paccheri are big (about an inch in diameter) tubular, floppy, and famous for collapsing on their sauce or stuffing when cooked. A 'pacca', in Napulitanu, means an affectionate slap. Paccheri go well with rich meat sauces, or stuffed and baked. One of Naples' ancient dishes—they say the Greeks made them in ancient Parthenope—they've been out of fashion but now are making a big comeback.
