Plural sgabei. From the Lunigiana in northern Tuscany and adjacent parts of eastern Liguria: big strips of yeast dough, fried and salted, made in an elongated form and then eaten plain or stuffed with cheese or ham. Sweet versions exist, too. See gnocchi fritti.
