Said to date back to the 15th century as a way of preserve stale bread, bruschetta has become an international hit in recent years. In its simplest, classic form grilled slices of bread are rubbed with garlic and drizzled with olive oil, then sprinkled with salt. Other common toppings including diced tomatoes with chopped basil, roasted red peppers or other vegetables, mozzarella, etc.

The Tuscan version is known as fettunta.
