rice and peas

Risi e bisi is the famous soupy Venetian risotto, made with pancetta, onions, and peas in vegetable broth. It tastes best in early spring, when the peas are young and tender. In the old days it was reserved only for holidays decreed by the Doge, one of which was 25 April, the feast day of St Mark.
