cow's milk cheese from the Alps

Semi-hard cheese made from cow's milk in the province of Sondrio since the 1500s, and sold either giovane (aged 70 days to 6 months), stagionato (6 to 10 months), and stravecchio (10 months and more), when it's at its hardest and most intense.
