Guess which country is the world's fourth-biggest consumer of shark meat. The shark on your plate is most likely either palombo (dogfish) or verdesca (blue shark), also known as squalo azzurro.

More rare are the pesce vacca, also called squalo capopiatto (cow fish, or bluntnose six-gill shark) and other species.
