Ol Sciur

'the boss' cheese

A soft, sweet boutique goat's milk blue cheese, produced in 10kg rounds in the province of Bergamo. The rind is washed in brine, then left to soak in soft red fruits and rose petals, giving it a unique taste. Often served as a dessert, or mixed in a risotto.
