culurgiones

fat oval pasta pillows

Often with a pretty ruffled edge. These are filled with various ingredients in different parts of Sardinia, although cheese and potato are probably the favourites. In Macomer they're filled with cheese, in Ogliastra they are filled with potato, garlic and mint. They usually come in tomato sauce.

There's also a sweet dish, culinzones 'e mendula made with ground almonds and baked in the oven.

Other names you might see across Sardinia are culingione, culurgiones, culinzones, culurrounes, culirgionis, pulilgioni or cullungiones
