traditional Abruzzo salami

Literally ‘mule testicles’, from its shape. It's the nickname for the mortadelle of the Abruzzo, specifically the mortadella di Campotosto near L'Aquila. This isn't really mortadella at all, but a unique kind of salame with a core of lardo. You can also find it in Southern Umbria, especially around Norcia.
