A delicacy in western France, a menace to the American Great Lakes but almost unknown in Italy, although it used to be quite common in the Arno and is eaten in Cercenasco, Piedmonte (where it's also known as lampré). Now rare, but if caught while young they are fried as part of a fritto misto.
