Guinea fowl

Fairly popular bird, pintades (Guinea fowl) usually coast a third more than a chicken, with juicy leaner darker meat rich in flavour, often described as ‘the way chicken used to taste.’

It’s roasted in the oven with garlic, or Savoy cabbage and bacon.
