Guinea fowl

Pintade or Guinea fowl has juicy, leaner and dark meat, rich in flavour, often described as ‘the way chicken used to taste’. It usually costs a third more than a chicken.

It’s usually roasted in the oven with garlic, Savoy cabbage and bacon.
