pike

Brochet is found in many French rivers, where its razor sharp teeth make it a top predator. It’s tasty but boney, so pike is often cooked in a sauce, then run through a sieve to remove the bones, which makes it a natural in quenelles.

Brochet de mer is a barracuda.
