John Dory

A very prized (and pricy) fish, Saint-Pierre (John Dory) has a distinctive black spot on its side, ‘the fingerprints of St Peter,’ or so they say. It’s caught in the English Channel andall down the Atlantic coast and Western Mediterranean.

The fillets are often baked with vegetables, cooked a la plancha or served in a simple sauce.
