couteaux de mer

razor clams

There are literally millions of razor clams on Formby Beach this is just one of them sitting there in the rising tide

Also known as the solen, couteaux de mer (razor clams) are hunted on Atlantic beaches at low tide in October and November. You catch them by sprinking salt in holes that resemble figure eights and out they pop.

They are usually cooked like mussels, or à la planche with butter and herbs.
