Prise à Ócsa, Hongrie

Caille are the smallest birds in the poultry section of the supermarket, nearly all of which are farm raised. French cooks prepare them according to dozens of recipes.

Oeufs de caille (quail’s eggs) are also available in most supermarkets and often pop up hard-boiled in salads...when a chef has enough patience to peel them.
