Prise à Ócsa, Hongrie

The smallest birds in the poultry section of the supermarché, caille are prepared according to dozens of recipes. Nearly all are farm raised.

Oeufs de caille (quail’s eggs) are also available in most supermarkets and often pop up hard-boiled in salads...when a chef has enough patience to peel them.
