Any pearl-shaped food, perhaps most commonly Perles du Japan are little tapioca balls that turn almost transparent in soup, resembling fish eggs. They are also used in bubble tea and desserts; you’ll usually find them next to the chapelure (bread crumbs) in the supermarché.
