Alectoris rufa, Espineirido, Galicia, Spain

The perdrix is the red-legged partridge (Alectoris rufa) or French partridge and is more likely to be seen scooting across a country road when you least expect it rather than in a pear tree.

As a dish it is served up in several ways, including Carcassonne’s traditional version of cassoulet.
