Pistacchio di Bronte

Pistache is a pistachio, but en pistache refers to a dish from the south of France with plenty of garlic, especially mouton en pistache—mutton braised in wine, ham, vegetables and 50 cloves of garlic. Other versions use partridges, or pigeons.
