combava

formerly known as Kaffir lime

Used in the cuisine of Réunion and southeast Asia, the extremely fragrant combava is now grown commercially along Corsica’s citrus-friendly east coast and sold in specialist grocers. The Corsicans also make a combava mustard, Moutarde de Corse au Combava (good with fish and pork).
