rosé des près

field or meadow mushroom

Rosé des prés

Agaricus campestris, the rosé des près is the common edible field mushroom, ancestor of the button mushrooms (champignons de Paris), noted for its pretty pink gills. They are often found in horse or cow fields in the autumn and can safely be eaten raw.

Also known as the psalliote champêtre.
