Pimpinella anisum. Anis is one of the world’s oldest known herbs. In France you sometimes see recipes asking for pimpinelle, which are the green leaves of the anis plant, used in salads and sauce Vincent.
The seeds, graines de anis vert, are used in cooking, primarily in pain d’épices and drinks such as pastis.
