grive

thrush

Grive musicienne dans une cuisine en mai 2022 à Chaise-Dieu du Theil, en Normandie, France.

Grives or thrushes are little song birds that reputedly taste very good. Unlucky ones in France usually end up as grives sur canapé (wrapped in bacon and roasted and served on toast).

Faute de grives on mange des merles (’when we lack thrushes we eat blackbirds’) is an old saying meaning we should make do with second best. Blackbird paté (pâté de merle) flavoured with juniper is actually a speciality of Corsica, but increasingly rare.
