sauce chasseur

a popular sauce with rabbit dishes

While Grand-Veneur sauce was reserved for red meat, sauce chasseur (‘hunter’s sauce’) was used for rabbit or game birds. Ingredients are chopped shallots browned in butter then reduced in white wine, sliced mushrooms, tarragon, chervil, and parsley. There are those who add crushed tomatoes as a garnish.

In spite of its name, it’s also a popular vegetarian sauce for pasta dishes.
