Madiera sauce

Grilled Creekstone Farms New York Steak with Mushroom Madeira Sauce, Scalloped Potatoes and Grilled Asparagus.

Often served with beef dishes, sauce madère requires onions or shallots and mushrooms sautéed in butter, with black pepper, thyme, bay leaves, and Madeira wine. Then beef demi-glace is whisked in before it is strained.
