goujon

gudgeon

Gobio gobioRiviergrondel

Gobio gobio. Goujon is gudgeon, a delicately flavoured fresh water fish found in France; caught in the Rhône, it’s popular in Lyon served fried.

In Louisiana, a gudgeon tends to be a catfish, but the word also means a small strip of fish or chicken, coated in breadcrumbs and deep-fried.
