a fat hen
A popular Christmas or New Year’s treat, a poularde is the female equivalent of a chapon: a chicken that was de-sexed before it ever laid an egg, and fattened with grain in the autumn.
They are heavier and fatter than laying hens (and certainly juicier than a turkey!) aged 112 days minimum before slaughter, according to French agricultural regulations.
