Poularde de bresse

A popular Christmas or New Year’s treat, a poularde is the female equivalent of a chapon: a chicken that was de-sexed before it ever laid an egg, and fattened with grain in the autumn.

They are heavier and fatter than laying hens (and certainly juicier than turkeys!) They’re aged a minimum of 112 days before slaughter, according to French agricultural regulations.
