In French culinary language suprême means rich and creamy.

Sauce suprême is a velouté, reduced and mixed with crème fraîche or heavy cream, then reduced and thickened until it coats the spoon, before adding butter.

Suprêmes de poulet or suprêmes de pintade is chicken or guinea fowl breast and upper part of the leg.
